Khai- Jiaw - Koonng - Sub
Thai Omelette with Prawn

Ingredients

3 eggs
1/2 cup minced prawns
2 teaspoon fish sauce
1/2 cup vegetable oil

Preparations
Break the eggs in to a bowl,add prawns,fish sauce.Beat with a fork and deep-fry in hot oil.medium heat.serve with steamed rice and chilie sauce.

Tip; you can substituted prawn with chicken, pork or even with herbs such as finely sliced shallot and chilies or sweet basil leaves.

Khai Look-Khuey
Deep fried boiled eggs with sweet & sour sauce.
The name of this dish is tinglish in thai cuisine.Khai-Look-Khuey in English direct translate is Son-In-law-Eggs! that's why,I mail this dish to you.

Ingradients

3 boiled eggs
1/4 cup palm sugar
2 tabs.fish sauce
2 tabs.tamarind paste
2 tabs. crisp fried sliced schallots
1 tabs. sliced dried red chilies-deep-fry
coriander leaves and thin strips of red chilies for garnishing.
Preparations
Fry the eggs in very hot oil until golden brown.Drain and cut in half, then arrange on a plate.
Dissolve suger over the heat with fish sauce and tamarind,continue stirring until become concentrate then pour the sauce over the eggs .Garnish with crispy fried sliced shallots,fried chilies,coriander,red chilies strips.

Spice & Sour Soup with Prawn
It is one of the well known Thai dishes abroad,this is spicy,sour.little bit sweet and little solty and fragrant soup.An ideal accompaniment to ather thai dishes with rice.

Ingredients

400g prawns,peeled and deveined,live the tail
2 sticks lemongrass cut in to pieces about 1"
5 slices galangal thinly
5 kaffir lime leaves torn in to pieces
2 thai coriander leaves cut 1" long
3-10 small red chilles crushed
100g straw muschrooms cut in to half
2-3 tbsp. fish souce or to taste
2 tbsp. lime juice or to taste
1/2 teaspoon suger
1 tbsp reasted chilli paste"nam-pirk-pow"
3 tbsp. milk
3 cups chicken stock"use chicken bont boil with the water"
